Encapsulated Gluconol-δ-lactone, the Gluconate-delta-lactone(GDL) as the
main material, using hydrogenated vegetable oil as the coating material,
produced by coating,compaction, crushing, screening and other processes,
with Megafood’s technology and process equipment.

Encapsulated Gluconol-δ-lactone can also be used as leavening agent,
pigment stabilizer, sour agent, seasoning agent, etc., used in fried food,
pastry, dough products and various beverages.

Product Advantage
Common gluconate-belta-lactone, can be stored in drying place, However, it
is easy to decompose into acids in humid environments, especially in aqueous
solutions.At room temperature, the lactone in the aqueous solution is
partially decomposed into gluconic acid within 30 minutes, and the
hydrolysis into acid is accelerated when the temperature is above 65℃, and
it is quickly completely transformed into gluconic acid at 95℃.Therefore,
when using ordinary lactone as a coagulant, it should be melted with cold
water, and please use it up within half an hour.
This greatly limits its use in the food industry. And after our company's
special process embedding treatment of lactone products, can completely
improve its inherent defects:
* Reduced moisture absorption to avoid acid hydrolysis during storage;
* Avoid its premature decomposition in aqueous solution;
* When used in soybean milk and cow milk, it will not solidify in advance;
* Heat and sterilize together with the product to avoid direct degradation
into gluconic acid and ensure solidification after cooling;
* More conducive to food processing and expand its application scope.
