What is Red Amaranth?
Amaranth red is purplish red powder, odorless, light-resistant and heat-
resistant (105ºC), soluble in water, and 0.01% aqueous solution is rose red,
insoluble in other organic solvents such as oil. The maximum absorption
wavelength is 520nm±2nm. It has poor bacterial resistance, good acid
resistance, stable to citric acid and tartaric acid, and turns dark red when it
meets alkali.
Functions of Red Amaranth:
Mainly used in dairy food, meat food, baked food, flour food, aquatic products,
various beverages, seasoning food and so on.
